			<content:encoded><![CDATA[<p>I plan our meals out for two weeks at a time (dinners only) for a few reasons.  First, my husband gets paid biweekly and I like to make sure our house is full of groceries before spending money on anything extra.  Therefore, I like to go grocery shopping right after he gets paid.  Second, I am a moderate couponer.  I&#8217;m by no means a Coupon Queen, but not really a beginner either.  I know how to save hundreds a week, but don&#8217;t have the time, energy or resources to do so.  I do what I can to save us as much as possible right now.  When my husband&#8217;s work schedule slows down, I will be able to be more vigilant about the savings, which is a good thing, since we won&#8217;t have overtime pay coming in anymore!  Anyway, the third reason I shop biweekly is that we live in a very small town and to get the best prices, I have to drive the forty miles to the nearest city.  I don&#8217;t have the time or desire to do that weekly or more.  I have found that it really saves us a lot of time and money to shop this way.  </p>
<p>Anyway, I get a lot of questions about recipes and what we&#8217;re having for dinner.  I am going to start a biweekly posting of our meal plan and corresponding recipes <em>(or not)</em>.  Keep in mind when you see all these tasty meals that are not college kid fare, our grocery budget is $200 biweekly for three or four adults (depending whether my uncle is staying here at the time) and two kids.  There are others who do a family of five or six on $200-$250 a MONTH!  That is my ultimate goal.  You really can have good food on a budget!  At this time, I won&#8217;t be getting into coupon tutorials, but these are the resources that got me started:</p>

<p>Most, if not all, coupon blogs also have a Facebook page, which I highly recommend.  I get so much great info from the ESM, FLHF, and BB pages!  Also, there are SO MANY MORE out there, but these are the ones I use.  I get overwhelmed if I read too much.  You also may want to look into coupon classes, taught at churches, community centers, and people&#8217;s homes by expert coupon clippers.  We have lots of them in our area and while I&#8217;ve never gone to one, I intend to when I&#8217;m ready to get more serious.</p>
<p>So back to the whole purpose of this post&#8230; My meal plan for the next two weeks.  All meals feed 4-6, depending on portions.<br />
&nbsp;<br />
<font size="5"><strong>Sunday</strong></font><br />
<font size="4">Big Salad</font> (we do this pretty much every other Sunday)</p>

There really isn&#8217;t a recipe for this, you just throw in whatever you like.  Sometimes, we don&#8217;t even do meat.  Some people call our usual variation a chef salad.<br />
Here&#8217;s what&#8217;s going in <em>this</em> week:<br />
2 bags of salad mix (greener selection + classic romaine)<br />
bacon, oven-fried crispy and crumbled<br />
4 hard-boiled eggs, chopped<br />
1 red bell pepper<br />
banana pepper rings<br />
1 cucumber<br />
croutons<br />
variety of dressings on the side<br />
&nbsp;<br />
<font size="5"><strong>Monday</strong></font><br />
<font size="4">Pork Tacos</font></p>
<p><center><em>(totally forgot to take a photo Monday!  Sorry!)</em></center></p>
<p>1 pork roast<br />
1 packet taco seasoning<br />
1 onion<br />
~3/4 c. water<br />
~3 tsp. chili powder<br />
flour tortillas<br />
sour cream<br />
shredded cheese<br />
romaine lettuce<br />
salsa</p>
<p>SO simple.  Dump 1/2-1 chopped onion (I do 1/2) into slow cooker first.  Place pork roast ( i choose the cut that has a layer of fat on top and it just comes right off when cooked, whereas some cuts have fat laced all throughout. sorry, i do NOT know my cuts of meat) in, followed by packet of taco seasoning, chili powder, and water.  Cook on low 7-8 hours or until easily shredded.  Remove pork to a platter and shred with forks.  This does not create very spicy meat.  If you want it spicier, you can try adding extra chili powder or you can heat in a skillet with more taco seasoning after shredding.<br />
Simply serve shredded pork on tortillas with sour cream, cheese, salsa, and lettuce.<br />

<font size="5"><strong>Tuesday</strong></font><br />
<font size="4">Fend for yourself!</font><br />
Sometimes, I just don&#8217;t want to cook.  Most of the time, it&#8217;s a planned night off.  Other times, I just rearrange the meal plan and relax.  This Tuesday, exhausted, I rearranged the schedule, fed the kids frozen foods, and had chips and salsa.<br />
&nbsp;<br />
<font size="5"><strong>Wednesday</strong></font><br />
<font size="4">Basil Chicken Pasta</font> (adapted from <a href="http://www.seriouseats.com/cgi-bin/mte/mt-cp.cgi?__mode=print_page&#038;entry_id=35078&#038;show_text=1&#038;show_ingredients=1&#038;show_procedure=1&#038;show_photos=0&#038;show_comments=0">Serious Eats</a>)</p>

<p>1/2 package penne<br />
2 tsp. olive oil<br />
1/2 finely chopped onion<br />
3 tsp. minced garlic<br />
1 14.5 oz. can diced tomatoes<br />
1 tsp. sugar<br />
3 boneless skinless chicken breasts, cubed<br />
1/4 c. chopped fresh basil<br />
1/2 tsp. salt<br />
1/8 tsp. hot sauce<br />
parmesan cheese</p>
<p>In a pot of salted boiling water, cook pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.  In a large skillet, heat oil over medium-high heat.  Place chicken in oil and cook, stirring frequently, until cooked through.  Remove chicken and set aside.  Toss the onions and garlic into the oil and saute. Stir in the tomatoes, sugar, cooked chicken, basil, salt and hot sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.  Toss sauce with penne to coat.  Top with Parmesan cheese.<br />

<p>1/4 cup olive oil<br />
3 onions, chopped<br />
3/4 cup brewed coffee<br />
1/8 cup chili powder<br />
1/8 cup ground cumin<br />
1 28-ounce cans crushed tomatoes<br />
3 tablespoons honey<br />
3 tbsp. minced garlic<br />
3 15-ounce cans of beans<br />
1/4 cup water<br />
1 1/2 teaspoons salt<br />
1/2 tsp. of ground cinnamon</p>
<p>In a slow cooker, combine all ingredients.  Cook on low 8 hours.  Taste and adjust salt if necessary.  If the consistency is too watery after 6 hours, you may add some tomato paste and a dash more honey and chili powder.  Serve topped with cheddar, sour cream, chives, or anything else you choose!  I serve mine with cornbread or Fritos.</p>

<p>I haven&#8217;t been cooking on Fridays for the last couple of months, because of my husband&#8217;s wonky work schedule.  Now that it&#8217;s changing, I&#8217;ll start Friday cooking again.  Or not?<br />

<p>1. My whole life, I had very mild PMS and periods.  Then I had kids.  Now, I have crippling cramps and with each child, the bleeding has gotten heavier.  I get weak and nearly pass out at times.  I woke up in the familiar pool of blood this morning.  Oh joy.</p>
<p>2. When I was a kid, any time my mom left the room I wanted to know where she was going and what she was going to do once she got there.  So often, her answer was, &#8220;I just need to pee, Rhonda!&#8221;  I couldn&#8217;t understand why she was annoyed.  Now, Nick is the same way and it drives me batty!  Sorry, Mom!</p>
<p>3. I really wish every cable network would get on the Full-Episodes-Online Bandwagon.  I don&#8217;t have cable while staying at my dad&#8217;s and I&#8217;m dying without my pals Tori, Dean, Giuliana, and Bill.</p>
<p>4. When Jason Mesnick dumped Melissa on national television and I found out by reading <a href="http://realitysteve.com/" target="_blank">Reality Steve</a> that it was probably all staged, I was done.  I vowed to not watch the next season of the Bachelor.  So I didn&#8217;t watch Jillian&#8217;s Bachelorette or Jake&#8217;s Bachelor.  Now, stuck here with no cable, what else can I watch?  I tuned in last night to Ali&#8217;s Bachelorette, only to turn it off before the rose ceremony even occurred.  So boring and she is so phony.  If you&#8217;re like me and know that these shows aren&#8217;t at all reality, but you like to watch the trainwreck anyway, I suggest reading <a href="http://realitysteve.com/" target="_blank">Reality Steve</a>&#8216;s spoilers, then tuning in to watch it all happen.  It adds a new dimension to it.</p>
<p>5. I did a shopping trip Saturday for two weeks of meals.  It was so much fun!  I scouted out the weekly ads online, paired that with the few coupons I had, made an organized list, and headed to Target and WinnDixie.  I saved so much money and will definitely be doing it again!</p>
<p>6. I have been trying some new products lately and think I&#8217;ll do a post to share my experience and opinions.  I think it&#8217;s fun to try new things and I love when I find something I&#8217;ll use or eat for life!</p>
<p>7. I am too excited that tonight begins the American Idol finale.  I hate for it to end, but am so ready to see my boy Lee sing and then tomorrow, win!  As Nick would say, WHOMP WHOMP!</p>
<p>8. Next month, my good friend Amber and I are having a Girls Night Out.  I have never needed one so badly in my life!  It&#8217;s going to be a good one, I can tell already!  A special thanks to <a href="http://daddygeek.org" target="_blank">my wonderful husband</a> who lets me have these little indulgences.  Sadly, not all husbands are as understanding.</p>
<p>9. I have decided to part with some childhood collectibles, because they are gathering dust in my closet and I need money!  It was a difficult decision, but once it was made, it felt sooo right!  I will probably make a minimum of $200.  Now, I just have to get myself motivated to do the work of listing them on eBay!</p>
<p>10. I am having a hard time believing that Harper will be a year old Friday.  It seems like I was just pregnant.  Also, we may be done having kids, so it&#8217;s pretty emotional for me!</p>
